10 Days Of Toast - Day 2 - PBJ, But Healthy


Welcome to day 2 of 10 Days Of Toast. Today’s toast recipe is for the old faithful, peanut butter and jam, but with a healthy twist. The jam is homemade, packed with super healthy chia seeds, and takes less than ten minutes to make. It's topped with gooey caramelized bananas, pumpkin seeds and cacao nibs. Even the kids will go nuts for it! Let’s get started.






To make chia seed jam, you will need a heaped cup of any fruit - I used strawberries that I had laying in the fridge, but anything will do, frozen or fresh. Raspberries, apricots, peach, blueberries - they all work for chia seed jam. Pop this in a pot over medium heat and let it break down, stirring it occasionally. It will take around five minutes. Then use a fork or a potato masher to mash some of the fruit up. I like mine a little chunky so went light with the mashing. Remove it from the heat and add 1 tablespoon of chia seeds, 1/2 tablespoon of fresh lemon juice, and 1 tablespoon of honey. The honey is entirely optional and if your fruit is sweet enough, you won’t even need it. Stir this thoroughly and let it sit for five minutes. As it cools, it will drastically thicken and voila, the jam is done. This makes enough for two or three toasts but you can make more and store in the fridge in an air-tight container for up to a week. 







Next, heat up a non stick pan and cut up a banana. Place this into the pan and let it cook for three minutes, before flipping and letting the other side cook for a further two minutes.  While the banana caramelizes, toast the bread. I used sourdough but you can use whatever you have.


Once the toast is ready, smear over nut butter of your choice - I used jarred peanut butter, then add the chia seed jam on top. Take the caramelized banana and add it on top of the jam. To finish, add some toppings - I used pumpkin seeds and cacao nibs, which are a highly nutritious chocolate product made from crushed cocoa beans. Because its Friday and I wanted to be extra, I grated a pistachio over the toast. And that is it - a healthy PBJ!




 


Peanut Butter & Chia Seed Jam With Caramelized Bananas


Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Yield: 2-3 toasts


Ingredients


2 sourdough bread slices 

peanut butter or any nut butter

1 heaped cup of strawberries

1 tablespoon of chia seeds

1 tablespoon of honey (optional)

1/2 tablespoon of fresh lemon juice

2 small bananas, cut in slices 

pumpkin seeds

cacao nibs 



Method


  1. Add the heaped cup of fruit to a pot over medium heat. Let this cook for five minutes, stirring occasionally.

  2. After five minutes, take off the heat and add in 1 tablespoon of chia seeds, 1 tablespoon of honey (optional) and 1/2 tablespoon of lemon. 

  3. Stir this until everything has fully mixed and set aside.

  4. Heat a non stick pan on medium-low and add the slices of banana. Let the first side cook for around three minutes, or until browned.

  5. In the meantime, toast the bread.

  6. Return to the pan and flip the bananas, letting them cook for a further 2 minutes. Remove from the heat.

  7. Smear the peanut butter on one side of the toast.

  8. Add the chia seed jam on top.

  9. Top with the caramelized bananas, pumpkin seeds and cacao nibs, or any toppings of your choice, and serve.
