10 Days Of Toast - Day 4 - Avocado Toast


I couldn't create a toast series without featuring the cult favorite avocado toast, right? This avocado toast recipe takes as long as it does to make toast, and is packed with nutrients. It's the go-to toast in my home and I promise you will love it too.





This avocado toast is basically a number of layers using simple ingredients, that pack in a punch. Garlic, chives, lemon and flaky salt are some of the ingredients added in tiny quantities to give a subtle, yet robust flavor. The first layer is garlic, followed by a thin smear of cream cheese, a bed of arugula, sliced avocado, tomatoes, chives, lemon juice, olive oil, salt and pepper. It is so good for breakfast or lunch, and keeps you filled on a working day.







Start by toasting your bread. I use sourdough for this but you can use what you have. While the bread is toasting, prepare the toppings by slicing a handful of any kind of tomato - I use cherry or grape tomatoes, half the avocado and slice into thin strips, and finely chop the chives.


When the toast is done, it's time to assemble - because that's all it is. Rub a clove of raw garlic on one slice of the toast. This will scrape into the toast and add in so much flavor. You can do as much as you like, but I usually do 1/2 of a clove per slice of toast (yes, I love garlic and have been married long enough). Then smear a thin layer of cream cheese on top of the garlic rubbed toast, like how you would butter toast. We want to add only a little. I used chive cream cheese but any will do. Omit the cream cheese to make this vegan. Then lay a bed of arugula, weighing it down with the avocado. Top with tomatoes, chives, a little squeeze of lemon juice, a tiny drizzle of olive oil, and salt and pepper. I really like flaky sea salt on this. And that is it! Super simple and so delicious.







 


Avocado Toast With Arugula & Tomatoes


Prep Time: 5 minutes Cook Time: 5 minutes Total Time: 5 minutes Yield: 2 toasts



Ingredients


2 slices of sourdough bread

1 avocado

1 clove of garlic

handful of grape tomatoes

handful of arugula

10g cream cheese

1 teaspoon freshly squeezed lemon juice

1 teaspoon olive oil

salt and pepper

3 sprigs of chives



Method


  1. Toast the bread.

  2. Prepare the toppings by slicing the tomatoes in halves. Half the avocado and slice into strips. Chop chives finely.

  3. Once the toast is made, rub garlic on one side.

  4. Smear a thin layer of cream cheese.

  5. Add the arugula to the toast.

  6. Add the avocado slices on top of the arugula.

  7. Top the avocado with the tomato halves.

  8. Sprinkle with finely chopped chives.

  9. Add the olive oil and lemon juice.

  10. Finish with salt and pepper, then serve.
